Number of servings: 12




2 tablespoons canna–olive oil plus 4 tablespoons light olive oil

12 large Fingerling potatoes, sliced thin on a mandolin slicer

Sea salt

Crushed black pepper




1.Preheat oven to 340ºF.

2.Line 2 large baking pans with parchment paper.

3.In a large bowl, drizzle the canna–olive oil mixture over sliced potatoes and toss well till 

4.evenly coated.

5.Arrange the potato slices on prepared baking sheets, spacing them ⅛ inch apart. 

6.Sprinkle with Maldon sea salt and pepper. Bake for 40 minutes, turning halfway through.

7.Remove when crisp, sprinkle with more salt and pepper, and serve.
