Let's get baked and preheat the oven to make some infused "funfetti" sugar cookies!
Makes 24 Large Sugar Cookies
Potency: Approximately 7.5mg THC/ cookie
1 cup salted butter, softened
1 cup organic cane sugar
2 eggs, room temperature
1 tsp vanilla extract
1tsp vanilla bean paste
3 cups + 1 tablespoon all organic purpose flour
2 tsp cornstarch
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
¼ cup + 2 Tablespoons colorful jimmies
Place softened butter in a large bowl
Stir in sugar and combine until creamy and smooth. (You can do this by hand or with a stand or hand mixer)
Add eggs, vanilla bean paste, and vanilla extract. Stir well.
In a separate bowl, whisk together your flour, cornstarch, baking powder, baking soda, and salt.
Gradually add the dry ingredients into the wet, stirring or mixing until completely combined.
Stir in jimmies
Cover bowl with plastic wrap and refrigerate. Chill for at least 1 hour.
Preheat oven to 340ºF and line cookie sheet with parchment paper.
Scoop about 2 tablespoons of dough and roll into a ball.
Place at least 2 inches apart on the cookie sheet.
Gently press down on dough ball to flatten slightly and lightly press your thumb onto the middle of each cookie forming a slight indentation. This will help keep your cookie from puffing up in the center and keep your cookies flat and even.
Bake at 340F for 12 mins (soft and chewy) to 15 minutes (crisp and crunchy).
Allow cookies to cool completely on the cookie sheet before enjoying (I know how tough this can be 😄).
